aebleskivers

2 1/2 cups flour
1/2 teaspoon salt
1 1/4 teaspoon soda
3/4 teaspoon baking powder
2 eggs, separated
2 cups buttermilk
3 tablespoons melted butter

Sift dry ingredients. Beat egg yolks; add to buttermilk. Combine buttermilk & dry ingredients. Add butter. Fold in beaten egg whites.

Heat aebleskiver pan to hot over burner; pour small amount of oil in each cup. Put tablespoon of batter in each hole & cook, turning once with two-pronged fork. Cook until golden on each side & done.

Serve with powdered sugar & raspberry jam.

What is that fruit? Some kind of mutant prickly pear? It's terrifying.

I got MLB an aebelskiver pan for his birthday. We haven't made any yet, but I'm looking forward to it. Turns out our new(ish) target carries Peanut Butter & Co. dark chocolate peanut butter, so I think some of them are going to get some of that in the middle... and I think I'll do some with Chukar Cherries red sour cherry preserve in the middle.

I'm hungry now.

Awww, I hope you enjoy your aebleskivers. Nate was ingenious at putting things in the middle of them -- bits of banana, blackberries. So far (having only made them myself twice), I've been more of a purist.

As for the crazy-looking fruit, the picture in no way does it justice. Erica & Freddy picked it up at Frank's. Bright, bright orange, and spiky, and dangerous, and then with that shocking, incongruous green when you cut into it... strikingly gorgeous, but not really so tasty.
